Porque vos también podés hacer huevos de Pascua - Because you can make Easter eggs too

Ingredientes:

Tableta de chocolate templado (yo usé chocolate semi amargo Mapricuber por 850 grs)
Chocolate o glacé real para decorar (yo usé baño de repostería blanco y con leche)
Alcohol etílico
Confites, caramelos, bombones y demás para rellenar (yo usé hojuelas de chocolate)

Utensilios:

Algodón
Pincel
Moldes para huevos, conejos, etc
Olla, bol, asadera


Paso a paso:

1. Mojar un algodón en alcohol y pasarlo por los moldes antes de empezar a poner el chocolate.


2. Cortar el chocolate en trozos grandes, como se ve en la foto.


3. Derretir el chocolate a baño maría. Para esto ponemos una olla con agua caliente y sobre la olla, sin que toque el agua, un bol con el chocolate. Revolvemos constantemente hasta que se termina de derretir por completo.


Tip 1: cuidar que no hierva el agua.
Tip 2: cuidar que no caiga agua en el bol con chocolate.
Tip 3: cuidar que el bol no toque el agua caliente.

Nota: yo usé un chocolate que ya viene templado y lo recomiendo. Básicamente uno sólo tiene que derretirlo y olvidarse de templarlo.

El temperado o templado de chocolate es un proceso en el cual se deshace el chocolate y por lo tanto los cristales de grasa del chocolate, lo enfriamos un poco para que se empiecen a formar nuevas redes de cristales de grasa y por último calentamos otra vez ligeramente el chocolate para fundir los cristales inestables de las nuevas redes y lo dejamos cristalizar por completo.
Este proceso nos da como resultado una red estable de grasa y por lo tanto un chocolate crujiente y brillante. En el caso del chocolate Mapricuber, no es necesario realizar este proceso.




4. Pincelar las dos partes del molde con chocolate y dejar en la heladera por un minuto o hasta que se haya solidificado el chocolate.



5. Repetir por lo menos 3 veces. Mientras más veces repitamos, más gruesa quedará la capa del huevo de chocolate y más felices serán los agasajados.

6. Desmoldar las dos partes del huevo.


Tip 4: Si el chocolate está bien frío, es más fácil de desmoldar.

Nota: en este paso fue muy importante el uso de alcohol, dado que de no haber usado, se va a hacer difícil desmoldar el chocolate.

7. Apoyar ambas partes del huevo sobre una asadera caliente por unos segundos, permitiendo que se derrita el chocolate de los bordes y así poder unir las partes. Antes de unirlas, rellenar con confites, caramelos, juguetes o lo que hayan elegido.






8. Rellenar las imperfecciones y decorar con chocolate (usar distintos tipos de chocolate para que se note la diferencia de colores), con glacé coloreado, etc.


9. Dejar secar o enfriar, según corresponda. 



10. A disfrutar!

Ingredients:

Tempered chocolate bar (I've used half-bitter Mapricuber's 850 grs bar)
Chocolate or glacé to decorate (I used different kinds of chocolate used for coating)
Ethyl Alcohol
Candy, toppings, bonbons and everything you want for filling the chocolate eggs.

Tools:
Cotton.
Cooking brush.
Eggs' mold (or rabbit, etc).
Pot, bowl, baking tin.

Method:

1. Soak a piece of cotton with alcohol and distribute in the molds before adding any chocolate.

2. Cut the chocolate bar into big pieces (as show in the picture).

3. Melt the chocolate using a bain-marie. In order to do that, put a bowl on a hot water pot, avoiding the bowl touches the water. Mix constantly until the chocolate is completely melted.

Tip 1: do not let the hot water boil.
Tip 2: chocolate shouldn't touch any water.
Tip 3: avoid the bowl to touch the pot's hot water.

Note: I recommend to use tempered chocolate. It's easier to use because you only have to melt it and use it.

Chocolate is composed of lots of different little crystals but the desirable ones are called beta crystals. The development and formation of these beta crystals are what makes well-tempered chocolate. Tempering controls the crystals so that only consistently small crystals are produced, resulting in much better-quality chocolate. Using tempered chocolate you can avoid the whole tempering process.

4. Brush the surface of the molds with chocolate and let them rest in the refrigerator for about a minute or until the chocolate is solid.

5. Repeat for at least 3 times. The more times we repeat the process, the thicker the chocolate egg will be and the happier everyone will be.

6. Remove the two parts of the egg from their mold.

Tip 4: If the chocolate is cool enough, this process will be easier.

Note: it is very important you use alcohol before brushing the molds with chocolate. If you skip this step, it will be pretty hard to remove the eggs from their mold.

7. Put both halves of the egg over a hot baking tin, wait until their border melt a bit so both halves can be stuck together. Fill one of the half with your desired filling and then stick.

8. Fill the imperfections and decorate with chocolate, glacé, etc.

9. Let them rest so the decorate gets solid.


10. Enjoy!

Falafel falafel falafel

Esta receta es apta vegetarianos, veganos y celíacos. Además, son al horno en vez de fritos, por lo que son más saludables :)

Ingredientes:

500 grs garbanzos secos
1 cebolla grande
3 o 4 dientes de ajo
sal (yo uso sal marina) y pimienta a gusto
perejíl fresco a gusto
1 cdita comino
2 cdas aceite de oliva
3 cdas harina de garbanzos (también se puede usar pan rallado pero no sería apta para celíacos)
2 cditas garam masala (opcional)
Aceite para cocinar (yo uso aceite de girasol alto oleico porque es mejor que otros a altas temperaturas)

Paso a paso:

1. Dejar en remojo los garbanzos con abundante agua toda la noche. Luego, escurrir.

2. Triturar los garbanzos en una batidora (yo los trituro por partes porque si ponemos muchos juntos en la licuadora, se trituran sólo los de abajo).


3. Triturar los dientes de ajo junto con la cebolla y el perejíl.

4. Mezclar en un bol los garbanzos, la cebolla, el ajo, el perejíl, el comino, sal, pimienta, garam masala, harina de garbanzos y aceite de oliva, hasta formar una pasta homogénea.


5. Aceitar una asadera.

6. Colocar bolitas de la preparación sobre la asadera y luego pincelar con un poco de aceite por encima de las bolitas.


7. Llevar a horno medio (aproximadamente 180ºC) por cerca de 20 minutos, dar vuelta las bolitas cuando estén doradas y dejar unos 5 minutos más.



8. A disfrutar!



English version

This recipe is suitable for vegetarians, vegans and celiacs. Besides, they are baked but not fried, which make them healthier :)

Ingredients:

500 gr dried chickpeas
1 big onion
3 or 4 garlic cloves
salt (I use sea salt) and pepper to taste
fresh parsley to taste
1 tsp cumin
2 tbsp olive oil
3 tbsp chickpeas' flour (you can also use breadcrumbs but it wouldn't be suitable for celiacs).
2 tsp garam masala (optional)
Oil for cooking (I use high-oleic sunflower oil because it has great heat tolerance)

Method:

1. Leave the chickpeas in water all night long. Cook them with plenty of water and strain.
2. Blend the chickpeas (I do it in different batches, because if I put them all in the blender, it won't actually blend the ones on top).
3. Blend the garlic cloves, onion and parsley.
4. Mix all the ingredients in a bowl: the chickpeas, onion, garlic, parsley, cumin, salt, pepper, garam masala, chickpeas' flour and olive oil until well mixed.
5. Grease a baking tin.
6. Take portions of the mixture, shape it into little balls and put them on the tin and brush them with some oil on top.
7. Bake in medium temperature (about 180ºC) for about 20 minutes or until their botton get golden brown, turn around and bake for another 5 minutes.
8. Enjoy!

So good to eat just one cookies - Galletitas demasiado buenas como para comer sólo una

Galletitas muy buenas, no sólo por lo ricas sino por ser una opción saludable de darse un gusto a la hora de la merienda o el desayuno. Veganas, integrales y sin agregado de grasa. Muy fáciles y rápidas de hacer.

Ingredientes:

1/2 taza azúcar rubia
3/4 taza de puré de manzana*
1 taza harina integral
1 cdita polvo para hornear
1/2 cdita sal
1/2 cdita canela en polvo
1 taza avena instantánea
1/2 taza pasas de uva
1/2 taza nueces trituradas (opcional)

* En caso de no tener puré de manzana, cocinar dos manzanas en el microondas por 4 minutos con un chorrito de agua y triturar con el resto de los ingredientes.



Paso a paso:

1. Precalentar el horno a 175º C (350ºF) y aceitar una asadera (yo uso aceite alto oleico).

2. En un bol, mezclar el azúcar con el puré de manzana.

3. Agregar la harina, polvo para hornear, sal y canela a la mezcla de puré de manzana.

4. Agregar la avena, pasas y nueces (si aplica) y mezclar hasta integrar bien.



5. Con ayuda de una cuchara, colocar porciones de la preparación en la asadera preparada.



6. Hornear por 10 minutos o hasta que estén doraditas.



7. A disfrutar!


English version

These cookies are really good in many ways. Not just tasty but a healthy option to give a to treat to yourself with a snack or at breakfast. Vegan, whole wheat, super easy and low fat cookies.

Ingredients:

1/2 cup brown sugar
3/4 cup applesauce*
1 cup whole wheat flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1 cup instant oats
1/2 cup raisins
1/2 cup chopped walnuts (optional)

*If you don't have no applesauce, heat up 2 apples peeled and chopped in the microwave for about 4 minutes with a bit of water and mashed them up with the other ingredients.

Method:

1. Preheat oven to 350ºF (175º C) and grease a cookie sheet (I use high-oleic oil).

2. In a bowl, stir together the brown sugar and applesauce.

3. Stir the flour, baking powder, salt, and cinnamon into the applesauce mixture.

4. Add the rolled oats, raisins and chopped nuts (if desired) and stir until combined.

5. Drop by rounded teaspoonfuls onto the prepared cookie sheet.

6. Bake for 10 minutes or until golden brown.

7. Enjoy!

Vegan Gluten free lentils hamburgers - Hamburguesas de lentejas veganas libres de gluten

Ingredientes:

1 taza lentejas
100 grs zanahoria rallada 
2 cdas lino molido
sal y pimienta a gusto
ají molido a gusto
provenzal a gusto

Paso a paso:

1. Remojar las lentejas durante toda la noche. Cocinar en abundante agua y escurrirlas bien para que no tengan excedente de agua.

2. Procesar la mitad de las lentejas cocidas. 

3. Mezclar bien las lentejas procesadas con el resto de las lentejas, la zanahoria rallada, el lino molido y los condimentos.





4. Formar bolitas de la preparación y darles forma de hamburguesa. Yo usé un molde, pero se les puede dar forma con la mano.




5. Hornear a temperatura media (180º aproximadamente) hasta que estén doradas, en una asadera previamente aceitada o roceada con aceite en aerosol. 



6. A disfrutar!

Ingredients:

1 cup lentils
100 grs grated carrots
2 tbsp grind flax
salt and pepper to taste
ground chili to taste
dried parsley and garlic to taste

Method:

1. Leave the lentils in water all night long. Cook them with plenty of water and strain.

2. Blend half the cooked lentils. 

3. Mix the blended lentils with the rest of the lentils, the grated carrots, the flax and the spices. 

4. Take small portions of mix, shape them into balls and flatten in order to give them hamburger shape. I used a mold in order to do so, but it can be done by hand.

5. Bake in medium temperature (about 180ºC) until they get golden brown in a baking tin. Grease the tin with a tsp of oil or nonstick spray. 

6. Enjoy!
