Cupcake con chips de chocolate y merengue de almendras - Jumbo chocolate chips cupcake with almond meringue topping

Salen 8 cupcakes 


Ingredientes:


Para los cupcakes

100 grs manteca blanda
100 grs (1/2 taza) azúcar
3 yemas
1 huevo
100 grs (3/4 taza) harina leudante
100 grs (3/4 taza) chips de chocolate semiamargo

Para el merengue

3 claras
200 grs azúcar
1 cda esencia de almendras
Chips de chocolate para decorar

Paso a paso:



1. Hacer un merengue suizo con las claras y el azúcar según este post: http://ashy-on-line.blogspot.com.ar/2011/08/merengues-frances-suizo-e-italiano.html.
2. Agregar la esencia y mezclar.
3. Poner 8 pirotines en un molde para cupcakes.
4. Poner la manteca, azúcar, yemas, huevo y harina en un bowl grande y, usando una batidora eléctrica, mezclar hasta que la preparación sea homogénea. 
5. Agregar los chips de chocolate e integrar.
6. Poner la mezcla en los pirotines, llenándolos hasta 3/4.
7. Hornear los cupcakes en un horno precalentado, 375ºF/190ºC, por 20-25 minutos, o hasta que estén altos y color dorado.
8. Dejar enfriar los cupcakes.
9. Una vez fríos, cubrir con abundante merengue y decorar con chips de chocolate.
10. A disfrutar!

Makes 8 cupcakes


Ingredients:


For the cupcakes

100 g soft butter
100 g (1/2 cup) superfine sugar 
3 yolks
1 egg
100 g (3/4 cup) self-rising white flour
100 g (3/4 cup) semisweet chocolate chips

For the topping

3 white eggs
200 g superfine sugar
1 tbsp almond essence
Chocolate chips to decorate

Method:


1. Make a meringue with the white eggs and the sugar.

2. Add the essence and mix.
3. Put 8 muffin paper cases in a muffin pan.
4. Put the butter, sugar, yolks, egg, and flour in a large bowl and, using an electric hand whisk, beat together until just smooth. 
5. Fold in the chocolate chips. 
6. Spoon the batter into the paper cases.
7. Bake the cupcakes in a preheated oven, 375ºF/190ºC, for 20-25 minutes, or until well risen and golden brown.
8. Transfer to a wire rack to cool.
9. When the cupcakes are cold, spread the meringue on top of each cupcake and sprinkle with some chocolate chips.
10. Enjoy!
