Scones de queso y eneldo - Cheesy dill scones

Ingredientes:
4 taza más una cda de harina, dividida
2 cda polvo para hornear
2 cdita sal marina
340g (3/4lb) manteca fría
4 huevos grandes
360 cm3 crema de leche
200g (1/2 lb) queso Mar del Plata o similar
1 taza de eneldo fresco (o media taza de eneldo seco)
1 huevo
1 cda agua

Paso a paso:

1. Precalentar el horno a 200ºC/400ºF.
2. Enmantecar el molde o asadera donde se hornearán los scones.
3. Cortar la manteca bien fría en cubos.
4. En un bowl, mezclar las 4 tazas de harina, el polvo para hornear y la sal.
5. Agregar la manteca y mezclar hasta obtener un arenado (ver foto 1). Se puede utilizar una procesadora para evitar darle calor a la masa y que la manteca se derrita mucho.

6. Mezclar los 4 huevos con la crema de leche. (ver foto 2). Agregar a la mezcla de harina.

7. Cortar el queso en cubitos chicos (ver foto 3).

8. En un bowl, mezclar el queso con el eneldo y la cucharada de harina (ver foto 4). Esto hará que el queso y eneldo quede equitativamente distribuidos en la masa final. Unir al resto de los ingredientes.

9. Amasar durante 1 minuto hasta logran una masa húmeda (ver foto 5).

10. Dividir la masa en porciones pequeñas y colocar en los modes respectivos (ver foto 7) o amasar con un palo de amasar y cortar con cuchico en porciones (ver foto 6).

11. Batir el huevo restante con la cucharada de agua y pincelar cada uno con esta mezcla (ver foto 7 y 8).

7. Pequeños scones pincelados - Brushed little scones.

8. Grandes escones pincelados - Brushed big scones.

12. Llevar durante unos 20-25 minutos, o hasta que se vean dorados (ver foto 9 y 10).

9. Pequeños horneados - Little baked ones.

13. Retirar del horno y dejar enfriar en una rejilla. Servir tibios.

English version

Ingredients:
4 cups plus 1 tbsp all purpose flour, divided
2 tbsp baking powder
2 tsps sea salt
340g (3/4lb) cold unsalted butter
4 large eggs
360 cm3 heavy cream
200g (1/2 lb) Mar del Plata cheese
1 cup minced fresh dill
1 egg
1 tbsp water

Method:

1. Preheat oven to 200ºC/400ºF.
2. Butter dish or baking sheets with a piece of butter.
3. Cube the cold butter.
4. In a bowl, mix the 4 cups of flower, the baking powder and salt.
5. Add the butter cubes and mix until you get a sandy mix (something similar to pebbles of sugar). See 1st picture. You can use a food processor to avoid the butter to melt.
6. Mix the 4 eggs and the heavy cream together (see 2nd pic). Add to the flour mix.
7. Cut the cheese into little cubes (see 3rd pic).
8. In a bowl, mix the cheese with the dill and the tablespoon of flower (pic 4). This will help them to distribute evenly throughout the dough. Add to the rest of the ingredients.
9. Knead for about a minute until you get a pretty wet dough (pic 5).
10. Divide the dough into little pieces and put in muffin rack (pic 7) or flatten dough using a rolling pin and cut with a knife into pieces (see 6th picture).
11. Beat the remaining egg with a tablespoon of fresh water and brush each scone with it (see pictures 7 and 8).
12. Bake for about 20-25 minutes, or until golden brown (see pictures 9 and 10).
13. Cool scones on a wire rack and serve warm.
