Mousse au chocolate

Ingredientes:

200 grs chocolate amargo
1 cda agua
5 huevos
180 cm3 crema de leche
4 cdas azúcar
pizca de sal

Paso a paso:
1. Derretir el chocolate con la cucharada de agua a baño maría.
Yo lo derrito en el microondas en 4 minutos al 60%, sacándolo cada 1 minuto del microondas y revolviendo para que se derrita parejo.
Nota: cuando derretimos chocolate en el microondas, si nos pasamos, el chocolate va a peder mucho líquido (esto depende de la calidad de chocolate). Si notamos que al sacarlo está muy seco, agregar un chorrito de agua y mezclar bien, hasta tener una consistencia homogénea.
2. Separar las claras y las yemas.
3. Batir las yemas con 3 cucharadas de azúcar a blanco y mezclar con el chocolate fundido.
4. Batir la crema y agregar a la mezcla de yemas, azúcar y chocolate.
5. Batir las claras a nieve con la pizca de sal y una cucharada de azúcar.
6. Agregar un cuarto de las claras a nieve a la mezcla de chocolate. Agregar el resto con movimientos embolventes suaves, para que la mousse no se baje y quede esponjosa.
7. Pasar la mousse a tazas o moldes pequeños y llevar a la heladera por, al menos, 4 horas.
8. A disfrutar!



English version

Ingredients:

200 grs dark chocolate
1 tbsp water
5 eggs
180 cm3 sour cream
4 tbsp sugar
pinch of salt

Method:
1. Melt the chocolate slowly in a heatproof bowl over a pan of barely simmering water.
I melt it in the microwave, 4 minutes at 60% power. I take it out every 1 minute and stir it so it melt evenly.
Note: melting the chocolate using a microwave may cause it to loose much water. If it does, add two water tablespoons and stir until smooth.
2. Whip the yolks with 3 tbsps of sugar and add to the chocolate mix.
3. Whip the sour cream and also add to the chocolate mix.
4. Whip the egg whites with the pinch of salt and a tablespoon of sugar, until soft peaks form when the whisk is removed, then gently fold them into the chocolate mixture.
5. Transfer the mousse to small cups or ramekins and refrigerate overnight, or until ready to serve (at least 4 hours).
