Torta deliciosa de zanahoria para comer con grandes amigos - Amazing carrot cake to share with great friends

Utensilios:
Bowl
Batidor eléctrico o manual
Molde para torta apto horno de 22cm de diámetro

Ingredientes:
Para la torta

250 grs de harina integral
2 cucharaditas de bicarbonato de sodio
1 cucharadita de polvo para hornear
1/2 cucharadita de sal (yo usé sal marina)
2 cucharaditas de canela en polvo
350 grs de azúcar común
225 ml de aceite vegetal (yo usé mitad de girasol y mitad de coco)
3 huevos
1 cucharadita de esencia de vainilla
225 grs de zanahoria rallada
75 grs de coco rallado
100 grs de nueces 

Para la cobertura
300 grs de queso crema
50 grs de manteca
250 grs de azúcar impalpable

Presentación - Presentation

Paso a paso:
1. Precalentar el horno a temperatura media (aproximadamente 180º C/356ºF).
2. Picar las nueces con un cuchillo.

3. Mezclar los ingredientes secos en un bowl: harina, bicarbonato, polvo para hornear, sal, canela, azúcar, coco y las nueces.

4. Rallar la zanahoria.

5. Agregar los huevos, aceite, esencia de vainilla y zanahoria rallada a los ingredientes secos y mezclar bien hasta obtener una mezcla homogénea.

Nota: romper los huevos en un recipiente separado para asegurarse que los mismos están en buen estado antes de mezclarlos con el resto de los ingredientes.

6. Llevar la preparación a un molde para horno de aproximadamente 22cm de diámetro.

7. Llevar al horno a 180ºC/356ºF durante unos 45 minutos, aproximadamente. Pinchar con un cuchillo. Si el mismo sale seco, ya está cocido. Si sale lleno de masa cruda, dejarlo unos 15 minutos más y volver a realizar la prueba.

8. Retirar del horno y dejar enfriar antes de cubrir con la cobertura.

7. Desmoldar una vez frío - Let it cool to take it off the tin

9. Para la cobertura, derretir la manteca en el microondas (30 segundos al 100% es suficiente) o en un tarrito a fuego medio.

10. Agregar el queso crema y el azúcar.

11. Batir energicamente durante unos 10 minutos o con batidor por 3 minutos. Se obtendrá una cobertura de consistencia cremosa.

12. Cubrir la torta con la mezcla. Va a sobrar suficiente cobertura para que cada comensal pueda agregar a su porción de torta una vez servida.

Tools:
Bowl
Beater (the manual or electronic one)
Baking tin of about 22 cm diameter (about 9 inches)

Ingredients:

For the cake
250 gr whole wheat flour
2 teaspoons bicarbonate of soda
1 teaspoon baking powder
1/2 teaspoon salt (I used sea salt)
2 teaspoons ground cinnamon
350 gr caster sugar
225 ml vegetable oil (I used half sunflower, half coconut oil)
3 eggs
1 teaspoon vanilla extract
225 gr grated carrots
75 gr desiccated coconut
100 gr chopped walnuts

For the icing
300 gr cream cheese
50 gr butter
250 gr powered sugar

Method:

1. Preheat oven to medium temperature (about 180º C/356ºF).
2. Chop the walnuts (picture 1).

3. Mix all the dry ingredients in a large bowl: flour, bicarbonate, baking powder, salt, cinnamon, sugar, coconut and walnuts (picture 2).

4. Grate the carrots (picture 3). 

5. Add the eggs, oil, vanilla extract and grated carrots to the dry ingredients and mix well.

Note: crack the eggs in a different bowl before you mix them with the rest of the ingredients in order to make sure they are in a good condition (picture 4).

6. Pour the mix in a baking tin of about 22 cm (about 9 inches) of diameter (picture 6).

7. Bake at 180ºC/356ºF for about 45 minutes. Poke the cake with a knife. If it comes out dry, the cake is ready. If it comes out covered in raw mix, bake for about 15 minutes longer and make the test again to make sure it is baked enough.

8. Take off the oven and let cool before added the icing.

9. For the icing, melt the butter in the microwave (30 seconds at 100% will be enough) or in a pot at medium heat. (picture 8).

10. Add the cream cheese and sugar.

11. Whisk vigorously for about 10 minutes (if using a manual beater) or 3 minutes if using an electronic one.  The icing will look creamy as shown in picture 10.

12. Cover the cake with the icing. There will be enough icing left to let every guest to add some on their piece of cake (picture 11).
