Mermelada casera de naranja (dulce o amarga) - Home-made orange jam (sweet or bitter)

Ingredientes:

3 naranjas grandes (preferentemente de ombligo)
500 grs azúcar
jugo de un limón

Paso a paso:

1. Lavamos y pelamos las naranjas, sacando la parte blanca, para que la mermelada no quede amarga.
2. Cortar la pulpa de las naranjas, sacar las semillas y colocar en una cacerola.
3. Cortamos la piel en tiras y colocamos en la cacerola.
4. Cocinar a fuego lento durante 40 minutos, revolviendo cada tanto para que no se pegue.
5. Agregar el azúcar y el jugo de limón y dejar cocinar hasta que la mermelada haga burbujas compactas. A este punto se lo llama "punto bolita" y para detectarlo podemos hacer lo siguiente: ponemos un poco de la parte líquida en una cuchara o un plato y le pasamos el dedo dibujando una línea. Si se dibuja la línea y no se vuelven a juntar las paredes, la mermelada está lista. Si se junta rápido, todavía está muy líquida y le falta cocción. 
6. A disfrutar!

Nota 1: la mermelada se espesa cuando se enfría. Es por eso que no conviene pasarse con la cocción, porque podría quedar muy dura.

Nota 2: si queremos conservar la mermelada, podemos envasarla al vacío. Para eso, rellenamos frascos de vidrio previamente esterilizados y los llevamos a baño maría durante 30 minutos. Luego, los dejamos en un lugar oscuro, seco y fresco.

Un truco es: mientras todavía hierve la mermelada, llenar los frascos esterilizados hasta arriba, cerrarlos y darlos vuelta. Dejar enfriar. De esta forma logramos un envasado al vacío evitando el baño maría.

Nota 3: si queremos mermelada de naranjas amarga, le dejamos parte de lo blanco a las cáscaras. Mientras menos blanco dejamos, más dulces saldrá la mermelada.

Ingredients:

3 big oranges
500 grs sugar
one lemon's juice

Method:

1. Clean and peel the oranges, taking out the white part to avoid the jam to be bitter.
2. Cut the oranges' pulp, take the seeds off and put it into a pan.
3. Cut the peel into strips and put into the pan.
4. Boil on medium heat for about 40 minutes, stiring every now and then so it doesn't stick.
5. Add the sugar and the lemon's juice and let it boil until the jam's bubbles look compact. To figure out when the jam is done: put some jam in a spoon or a plate, cross the jam with your finger drawing an straight line. If the line's walls don't join, the jam is ready. If they join quickly, it's not thick enough and you should keep cooking. 
6. Enjoy!

Note 1: the jam will thicken when it cools. That's why it's not convenient to over-cook it, because it could be very hard. 

Note 2: if you want to preserve the jam, you can vacuum pack it: fill previously sterilized jars and put them into bain-marie (or water bath) for 30 minutes. Then, let them rest in a dark, dry and cool place.

A useful trick: while the jam is still boiling, fill in the jars to the top, close and turn them round. This way we get them vacuum packed without the bain-marie. 

Note 3: if you want a bitter orange jam, let the oranges' peel some of their white part. Less the white, sweeter the jam.

Milanesas de calabaza a la napolitana - Breaded pumpkin steak in the Neapolitan style

Ingredientes


1.5 kg zapallo anco

350 g pan rallado
100 g avena
3 huevos
leche
ajo en polvo
pimienta
sal
queso 
un chorrito de aceite de oliva
orégano

salsa:

1 lata de tomate
sal
condimento para pizza
aceite de oliva


Paso a paso

1. Cortar el zapallo en rodajas de aproximadamente 1cm de ancho.

2. Cocinar en agua hirviendo por unos 2 o tres minutos, retirar del agua y dejar enfriar.
3. Pelar las rodajas.
4. Batir los huevos con un chorrito de leche, ajo en polvo, sal y pimienta, a gusto. 
5. Mezclar el pan rallado con el avena.
6. Pasar cada rodaja de zapallo por huevo, luego por pan y repetir.
7. Aceitar una fuente para horno y colocar las milanesas.
8. Para la salsa: licuar los tomates con un chorrito de aceite de oliva y sal. Agregar condimento para pizza.
9. Llevar a horno medio por 10 minutos, dar vuelta y colocar abundante salsa y queso. Espolvorear con orégano y dejar durante otros 10 minutos.
10. A disfrutar!




English version

Ingredients


1.5 kg pumpkin

350 g bread crumbs
100 g oats
3 eggs
milk
garlic powder
pepper
salt
cheese 
one drop olive oil
oregano

sauce:

1 tomatoe can
salt
pizza spices
olive oil

Method


1. Cut the pumpkin into 1cm slices.

2. Boil the slices for 2 or 3 minutes, drain and let them cool.
3. Peel the slices.
4. Stir the eggs with a drop of milk, garlic powder, salt and pepper. 
5. Mix the bread crumbs with the oats.
6. Put each slice into the egg mix, the into the bread crumbs and repeat.
7. Oil a baking tin and put the breaded pumpkin steaks on it.
8. For the sause: blend the tomatoes with a drop of olive oil and salt. Add pizza spices.
9. Bake the bread pumpkin steaks in preheated oven for about 10 minutes, turn them round and put sauce and chesse on top of each pumpkin slice. Sprinkle with oregano and bake for about 10 more minutes.

Bomba de chocolate y menta con forma de torta - Mint and chocolate cake shaped bomb

Esta torta es mínimo dos recetas en una y es una gloria! Un must para los fanáticos de la combinación menta y chocolate.


Ingredientes


Base
150g chocolinas
50g manteca
2cdas azúcarMarquise de chocolate
200g chocolate
100g manteca
100g azúcar
1/4 taza cacao amargo
4 Huevos

Mousse de menta
3 huevos
1/2 taza de azúcar
250g crema
1/4 taza de licor de menta
1 sobre (7g) gelatina sin sabor

Paso a paso

Base:
1. Procesar las chocolinas. Yo las parto con las manos.
2. Derretir la manteca y mezclar con las chocolinas. 
3. Ponerlas en un molde de aproximadamente 22 cm de diámetro y llevar al horno durante 15'.

Marquise de chocolate:

4. Derretir el chocolate con la manteca (se puede derretir en el microondas o a baño maría).
5. Batir las yemas con la mitad del azúcar. 
6. Batir las claras a nieve con la otra mitad del azúcar. 
7. Mezclar el chocolate con el cacao. 
8. Agregar las yemas y por último las claras batidas a nieve.

Mousse de menta:

9. Batir las yemas con la mitad del azúcar. 
10. Batir las claras a nieve con el resto del azúcar. 
11. Batir la crema a medio punto. 
12. Mezclar el licor con las yemas y gelatina disuelta previamente en un poquito de agua tibia. 
13. Agregar las claras y por útlimo la crema.

Armado:
14. Colocar la marquise de chocolate arriba de la base de chocolinas (esperar a que la base este fria).

15. Llevar al freezer (durante al menos media hora). 
16. Agregar la mousse de menta y llevar de vuelta al freezer. 
17. Una vez que esté bien fría (aproximadamente 4 horas de freezer), a disfrutar!

This cake is at least two recipes in one and is a glory! It's a must for fans of mint-chocolate combination.

Ingredients

Base
150g chocolate cookies
50g butter
2 tbs sugarChocolate Marquise
200g chocolate 100g butter
100g sugar
1/4 cup unsweet cocoa
4 eggs

Mint mousse
3 eggs
1/2 cup sugar
250g sour cream
1/4 cup mint liquor
1 envelope (7g) unflavoured gelatine

Method
Base:
1. Grind the cookies. I crush them by hand.
2. Melt the butter and mix with the cookies. 
3. Put in a round tin (around 22cm of diameter) and bake in the oven for about 15 minutes.

Cholate marquise:
4. Melt the chocolate and butter (microwave or bain-marie).
5. Stir the yolks with half the sugar. 
6. Stir the white eggs with other half. 
7. Mix the chocolate with the cocoa.
8. Add the yolks and the white eggs.

Mint mousse:9. Stir the yolks with half the sugar. 
10. Stir the white eggs with other half. 
11. Stir the cream. 
12. Mix the liquor with the yolks and the gelatine previously dissolved in half a cup of warm water.
13. Add the white eggs and the cream.

Assembling all together:
14. Put the chocolate marquise on the cookies base (wait until the base is cold).
15. Put into the freezer for at least half an hour. 
16. Add the mint mousse on top and put back into the freezer.
17. Once it's cold enough (around 4 hours), enjoy!
