Tapas para empanada integrales y orgánicas - Organic whole wheat dough discs for turnovers

Salen, aproximadamente, 2 docenas de discos de 15cm de diámetro.

Utensilios:
Bowl
Palo de amasar
Taza, balanza o medidor
Cortapasta o tupper de forma circular para cortar las tapas de 15 cm de diámetro*

* Si usamos otro tamaño, pueden salir más o menos tapas que las que indica la receta.

Ingredientes:
6 tazas (700 grs) de harina integral orgánica
1 1/2 taza de agua (aproximadamente)
2 cditas sal marina
1/2 taza aceite de oliva

Paso a paso:

1. Colocar todos los ingredientes secos en un bowl.

2. Agregar una taza de agua y comenzar a unir los ingredientes.
3. Continuar agregando agua hasta que se forme una masa como la que se ve en la foto 2.
La masa debe ser firme y elástica.

4. Amasar durante un minuto.
5. Con la ayuda de un palo de amasar, tomar trozos de la masa final y estirar hasta que tenga un grosor de, aproximádamente, 1 milímetro.

6. Cortar círculos de masa con el cortapasta o tupper que elegimos.

7. Usar estas tapas para realizar empanadas o fatay. Poner una cucharada del relleno a elección en el centro de la tapa de empanada, cerrar la tapa y  luego llevar al horno.

English version


Makes about 2 dozens of dough discs of 15 cm of diameter.

Tools:

Bowl
Rolling pin
Cup, measuring tool or food scale
Round dough cutter or a plastic container of about 15 cm of diameter.*

* If you use other size, you'll get more or less discs that the once stated in this recipe.

Ingredients:

6 cups (700 grs) organic whole wheat flour.
1 1/2 cup of water (about)
2 tsp sea salt
1/2 cup olive oil

Method:

1. Put all the dry ingredients in a large bowl.
2. Add a cup of water and start mixing the ingredients.
3. Keep adding water until you get a firm dough, as the one shown in picture 2.
The dough should be firm and elastic.
4. Knead the dough for about a minute.
5. Stretch a piece of dough using the rolling pin until it gets about 1 millimeter thick.
6. Cut the dough discs using the cutter or plastic container.
7. Use the dough discs to make empanadas, turnovers or Arab pastry (fatay). Place a tablespoon of filling in the center of each empanada disc, close the disc and brake.

Matambre de seitán - Stuffed rolled seitan

Utensilios:

Bowl
Taza, medidor o balanza
Papel film
Olla grande (suficiente como para que quepa todo el matambre)

Ingredientes:

Para el seitán
1 1/2 (250grs) tazas gluten de trigo 
3/4 taza agua
1/4 taza salsa de soja
1 cdita sal
1 cda paprika en polvo
1/2 cdita ajo en polvo

Para el relleno
2 dientes de ajo
50 grs perejil
1/2 zanahoria 
1/2 cebolla
1/2 morrón rojo chico
4 portobelos
50 grs nueces

Paso a paso

1. Mezclar todos los ingredientes para el seitán en un bowl y amasar durante un minuto para unir bien todos los ingredientes.

2. Estirar la masa sobre un papel film estirado (ver foto 4). Esta es la parte más "difícil" de la receta porque la consistencia de la masa es algo chiclosa, pero con paciencia se llega a lograr la forma deseada.

3. Picar el ajo y el perejil.
4. Cubrir la masa con el ajo y perejil picado.

5. Ajo y perejil - Garlic and parsley.

5. Cortar la zanahoria, morrón y cebolla en Juliana. 
6. Cortar los portobelos en capas finas.

6. Relleno - stuffing.
7. Colocar el resto de los ingredientes del relleno en forma transversal a la masa, como se ve en la foto 7.

8. Con ayuda del papel film, enrollar el seitán cuidando que los ingredientes queden dentro del rollo.

9. Cubrir el matambre de seitán con varias vueltas de papel film dejando que sobre algo de film en los bordes del matambre, para poder hacer un nudo en las puntas antes de cocinarlo. 

Nota: hay que poner unas 10 capas o más de papel film, para evitar que el seitán se desarme durante la cocción.

10. Envuelto en papel film - Wrapped with plastic wrap.


10. Atar las puntas del papel film con un nudo y con hilo de algodón o similar.

11. Pinchar todo el matambre con un escarbadientes. Este paso es importante para permitir la correcta cocción del mismo.

12. Pinchar con un escarbadientes - Stab with a toothpick.

12. Colocar agua en una olla lo suficientemente grande como para colocar el matambre completo y que quede sumergido en el agua. 
13. Hervir el matambre durante 1 hora y cuarto, aproximadamente.

13. Hervir en agua - Boil in deep water.

14. Sacar del agua y dejar enfriar.

14. Dejar enfriar - Let it cool.

15. Cortar en fetas y disfrutar!

Tools:

Bowl

Plastic wrap
Big pot (big enough to put the rolled seitan into it)
Ingredients:

For the seitan
1 1/2 (250 gs) cup wheat gluten
3/4 cup water
1/4 cup soy sauce
1 tsp salt
1 tbsp paprika
1/2 tsp garlic powder

For the stuffing
2 garlic cloves
50 gs parsley
1/2 carrot 
1/2 onion
1/2 bell pepper
4 portobello
50 gs walnuts

Method:

1. Mix all the seitan ingredients in a bowl and knead for a minute.
2. Stretch the dough on a plastic wrap. (see picture 4). This may be the hardest part of the recipe because the seitan dough is sticky or taffy. But be patience and you will get what you want :)
3. Chop the garlic and parsley.
4. Cover the dough with the garlic and parsley (see picture 5).
5. Cut the carrot, pepper and onion in julienne cut.
6. Cut the portobellos into thin slices.
7. Put the rest of the stuffing ingredients across the dough, as shown in picture 7.
8. Helping with the plastic wrap, roll the seitan keeping all the ingredients inside the roll.
9. Wrap the seitan with several layers of plastic wrap, and let some left overs in the ends to tie it. 

Note: about 10 layers of pastic wrap will be necessary to avoid the seitan to loose its shape during the cooking.

10. Tie the ends of the wrapping paper making two knots and also with some cotton thread or similar.
11. Stab the rolled seitan with a toothpick as shown in picture 12.
12. Put some water into a pot big enough to let the whole rolled seitan under water.
13. Boil it for about and hour and fifteen minutes.
14. Take out of water and let it cool.
15. Cut into slices and enjoy!
