Arroz con leche me quiero casar - Rice pudding

Suculenta porción de arroz con leche - Yummy rice pudding serving

Versión en español

Ingredientes:

200 grs de arroz blanco
100 grs de azúcar
1 litro de leche
ralladura de un limón
1 cucharadita de esencia de vainilla
canela a gusto

Utensilios:

Olla
Medidor o balanza
Cuchara de madera
Rallador (para obtener la ralladura de limón)

Paso a paso:

1. Colocar el litro de leche, los 200 gramos de arroz, la cucharadita de esencia de vainilla y la ralladura de limón (sólo la parte amarilla, no la blanca) en una caserola a fuego bajo (ver foto 4).

1. Agregar el arroz a la leche -  Add the rice to the milk

2. Agregar vainilla - Add vanilla

3. Agregar la cáscara de un limón - Add the lemon zest

2. Revolver con cuchara de madera para que no se pegue el arroz.

No es necesario revolver todo el tiempo antes de que la leche empiece a hervir.

4. Mantener el fuego bien bajo - Keep it in a very low heat


3. Cuando empiece a hacer burbujitas la leche, agregar el azúcar.

5. Agregar el azúcar - Add the sugar


4. Seguir revolviendo para evitar que se pegue. 

Nota: no es necesario revolver todo el tiempo, pero mientras más fuerte esté el fuego, más rápido se va  consumir el líquido de la leche y esto hace que el arroz tienda a pegarse en la base de la olla. Mientras más densa sea la preparación, mayor será el riesgo de que se pegue, por lo que hay que revolver más seguido.

5. A los 20 o 30 minutos del hervor, dependiendo de lo fuerte que esté el fuego, la preparación va a haber espesado. Probar el arroz para ver si está cocido.

6. Una vez cocido el arroz, retirar del fuego.

Nota: es posible que la preparación esté muy densa porque se evaporó gran parte del agua de la leche pero el arroz esté todavía crudo. En ese caso, podemos agregar un poco más de leche hasta que el arroz esté listo para evitar que la preparación se queme.

7. Servir con canela a gusto.

English version

Ingredients:

200 grs white rice
100 grs sugar
1 litre of milk
zest of one lemon
1 teaspoon vanilla extract
cinnamon to taste

Tools:

Saucepan (big enough to contain a litre of milk and some more)
A measure cup or cooking scale
Wooden spoon
Grater (to get the lemon zest)

Method:

1. Put the milk, rice, the vanilla and the lemon zest (only the yellow part, not the white one) into the saucepan and put over a very low heat (see picture 4).

2. Stir with a wooden spoon so the rice doesn't stick.

You don't need to stir all the time before the milk boils.

3. When it starts boiling (you can see little bubbles on the corner of the saucepan, add the sugar.

4. Keep stiring so it doesn't stick to the pan. 

Note: it is not necessary to stir all the time, but the upper is the heat, the quicker the water in the milk will be gone. If the mix gets too thick, it may be easily stick. 

5. Cook for about 20 or 30 minutes after the milk started boiling. Test the rice to see if it is ready.

6. Once the rice is cooked, remove from heat.

Note: if the mix is very thick but the rice is not done yet, you can add more milk until the rice is completely cooked so the rice pudding won't be burnt.

7. Serve with cinnamon to taste.
