Cupcakes Húmedos de Nuez - Moist Wallnuts Cupcakes

Salen 12


85 grs (3 oz) de nueces
57 grs (4 cdas) de manteca pomada (a temperatura ambiente)
100 grs (3 1/2 oz) de azúcar común
ralladura de medio limón
70 grs (2 1/2 oz) de harina leudante
2 huevos
12 mitades de nuez, para decorar


Frosting:
57 grs (4 cdas) de manteca pomada (a temperatura ambiente)
85 grs (3 oz) de azúcar impalpable
ralladura de medio limón
1 cda de jugo de limón


Paso a paso:






1. Poner 12 pirotines en un molde para cupcakes o colocar 12 pirotines dobles bandeja para horno.

2. Poner las nueces en una procesadora y, usando la acción de pulsar, procesar hasta obtener un arenado fino, teniendo cuidado de no triturar de más, dado que se volverían aceite. Agregar la manteca, cortada en pequeños trozos, junto con el azúcar, la ralladura de limón, el harina, y los huevos, luego procesar hasta que quede una mezcla uniforme.
Con una cuchara, llenar los pirotines con la mezcla.

3. Cocinar los cupcakes en horno precalentado, 190ºC / 375ºF, durante 20 minutos, o hasta que se hayan elevado bien y se doren. Pasar a una rejilla y dejar enfriar.

4. Para hacer el frosting, colocar la manteca en un bowl y batir hasta que esté esponjosa. To make the frosting, put the butter in a bowl and beat until fluffy. Tamizar el azúcar impalpable, agregar la ralladura y el jugo de limón, mezclar bien.

5. Cuando los cupcakes estén fríos, esparcir el frosting sobre cada uno y colocar una mitad de nuez encima para decorar.



English Version:




Makes 12

3 oz (85 grs) walnuts
4 tbsp (57 grs) butter, softened
3 1/2 oz (100 grs) superfine sugar
grated rind of 1/2 lemon
2 1/2 oz (70 grs) self-rising white flour
2 eggs
12 walnut halves, to decorate

Frosting:
4 tbsp (57 grs) butter, softened
3 oz (85 grs) confectioners' sugar
grated rind of 1/2 lemon
1 tsp lemon juice

Method:

1. Put 12 paper baking cases in a muffin pan, or place 12 double-layer paper cases on a cookie sheet.

2. Put the walnuts in a food processor and, using a pulsating action, blend until finely ground, being careful not to overgrind, which will turn them to oil. Add the butter, cut into small pieces, along with the sugar, lemon rind, flour, and eggs, then blend until evenly mixed.
Spoon the batter into the paper cases.

3. Bake the cupcakes in a preheated oven, 375ºF / 190ºC, for 20 minutes, or until well risen and golden brown. Transfer to a wire rack and let cool.

4. To make the frosting, put the butter in a bowl and beat until fluffy. Sift in the confectioners' sugar, add the lemon rind and juice, and mix well together.

5. When the cupcakes are cold, spread the frosting on top of each cupcake and top with a walnut half to decorate.
