Vinagreta de miel, o cómo hacer que coma verduras - Honey vinaigrette, or how to make him eat his veggies

Para una ensalada abundante (comen dos)

Ingredientes:

40 grs miel
15 grs mostaza
30 grs aceite de oliva
15 grs vinagre de manzana

Paso a paso:

1. Colocar todos los ingredientes en un bowl.
2. Mezclar con batidor hasta que los ingredientes estén bien integrados (ver foto).


3. Aderezar una buena ensalada de muchos colores. Mezclar bien para evitar que la vinagreta quede sólo en la parte de abajo del bowl.
4. (Opcionalmente) Es polvorear con algunas semillas para agregar valor nutricional a la ensalada.
5. A disfrutar!


English version

To dress a salad for two

Ingredients:

40 gs honey
15 gs mustard
30 gs olive oil
15 gs apple vinegar

Method:

1. Put all the ingredients in a bowl.
2. Beat until you get a uniform smooth mixture (see picture).


3. Dress a big colorful salad. Mix well so all the veggies have some of the vinaigrette on them.
4. (Optionally) Sprinkle some seeds to add nutritional value to the whole salad.
5. Enjoy!

Pollo agridulce al estilo chino - Chinese style sweet and sour chicken

Salen 2 porciones abundantes.

Ingredientes:

Para el pollo:
300 grs pechuga de pollo
2 cdas de salsa de soja
4 cdas harina común
Pimienta a gusto
Aceite de girasol para freír
200 cm3 cerveza

Para las verduras:
2 cebollas grandes
1 pimiento rojo

1 pimiento verde

2 cdas aceite de girasol
Sal y pimienta a gusto

Para la salsa:
4 cdas ketchup
3 dientes de ajo
3/4 taza azúcar
1/2 taza vinagre blanco
1 cda de aceite

Paso a paso:


1. Precalentar el horno a 175ºC.

2. Lavar y cortar el pollo en cubos.

3. Dejar macerando en la salsa de soja.



4. Cortar la cebolla y los pimientos en trozos y saltear en una sartén o wok con las dos cucharadas de aceite, sal y pimienta.


No cocinar mucho sino que dejar que queden crujientes y luego llevar a una asadera.


5. Realizamos una mezcla con la harina, pimienta y la cerveza. Ponemos las piezas de pollo con su jugo en la mezcla hasta que queden bien rebozadas.

Nota: la mezcla tiene que quedar espesa. Si no es así, agregar un poco de harina y mezclar.

6. Freimos las piezas de pollo rebozadas en aceite bien caliente hasta que estén dorados de un lado, luego dar vuelta con una espátula y esperar hasta que estén dorados del otro lado evitando remover todo el tiempo. Una vez fritas, escurrir sobre papel de cocina y luego agregar a la asadera junto con las verduras.


Nota: Es importante que el aceite esté bien caliente antes de meterel pollo. Para darnos cuenta, tiramos en el aceite un poquito de la mezcla para rebozar y si enseguida sube rodeada de burbujas de aceite, es que tiene la temperatura justa freir.
Si no se tiene una buena temperatura del aceite, el pollo absorvería mucho aceite y el plato quedaría extremadamente pesado.



7. Para la salsa, mezclar los ingredientes en una olla.


8. Llevar a fuego fuerte durante 5 minutos.

9. Echar la salsa sobre el pollo y las verduras y llevar la asadera al horno durante aproximadamente, 45 minutos.



10. Revolver cada 15 minutos para que todo quede bien impregnado de salsa.


11. A disfrutar!


English version
Makes 2 large servings.

Ingredients:

For the chicken:
300 grs chicken breast
2 tbsp soy sauce
4 tbsp all purpose flour
Pepper to taste
Sunflower oil to fry
200 cm3 beer

For the veggies:
2 big onions
1 red pepper
1 green pepper
2 tbsp sunflower oil
Salt and pepper to taste

For the sauce:
4 tbsp ketchup
3 garlic cloves
3/4 cup sugar
1/2 cup white  vinegar
1 tbsp oil

Method:

1. Preheat the oven to about 175ºC (347º F).
2. Clean well and cut the chicken into cubes.
3. Let the chicken macerate with the soy sauce.
4. Cut the onions and peppers into pieces and sauté with the 2 oil tbsp, salt and pepper.
5. Mix the flour, pepper and beer. Dip all the chicken cubes with its sauce into the batter.
Note: the batter should be thick enough. If not, add some more flour and mix again.
6. Fry deep in oil trying not to move the chicken cubes all the time until they were brown gold from one side. Then turn them upside down and wait until they were brown gold from the other side.

Note: It's important the oil to get the correct temperature before we begin to fry. To find out when it is,  put a bit of batter in the oil and, if right the way it boils up rounded by oil bubbles, it means the oil is ready to fry.
If we don't wait until a good oil temperature, the chicken would consume almost all the oil and the dish would be really heavy.

7. Save the fried chicken in a baking tin with the veggies.
8. For the sauce, chop the garlic cloves and mix with the rest of the sauce ingredients in a sauce pan.
9. Cook the sauce over a high heat for about 5 minutes.
10. Pure the sauce on the chicken and bake them for about 45 minutes.
11. Mix the chicken every 15 minutes so every potato get some sauce.
12. To enjoy!

Versión vegetariana de pollo agridulce - Veggie version of sweet ans sour chicken

Salen 3 porciones abundantes.

Ingredientes:

1 kg papas blancas
200 grs harina
sal y pimienta a gusto
2 huevos
1 chorrito de leche
500 cm3 aceite neutro para freir

Para la salsa:
4 cdas ketchup
3 dientes de ajo
3/4 taza azúcar
1/2 taza vinagre blanco
1 cda de aceite

Paso a paso:

1. Precalentar el horno a 175ºC.
2. Lavar bien y cortar las papas en cubos.



3. Salpimentar las papas.



4. Pasar los cubos por la harina y luego por el huevo batido con el chorrito de leche.



5. Freir en el aceite sin mover las papas hasta que estén doradas de un lado, luego dar vuelta con una espátula y esperar hasta que estén doradas del otro lado.


Nota: Es importante que el aceite esté bien caliente antes de meter las papas. Para darnos cuenta, tiramos en el aceite un poquito de papa y si enseguida sube rodeado de burbujas de aceite, el mismo está listo para freir.
Si no se tiene una buena temperatura del aceite, las papas absorverían mucho aceite y el plato quedaría extremadamente pesado.

6. Reservar las papas fritas en una asadera.


7. Para la salsa, picar el ajo y mezclar el resto de los ingredientes en una olla.
8. Llevar a fuego fuerte durante 5 minutos.


9. Echar la salsa sobre las papas y llevar la asadera al horno durante aproximadamente, 45 minutos.


10. Revolver las papas cada 15 minutos para que queden bien impregnadas de salsa.


11. A disfrutar!



English version

Makes 3 big serves.

Ingredients:

1 kg (2 lbs) white potatoe
200 grs regular flour
sault and pepper to taste
2 eggs
1 bit of milk
500 cm3 oil to fry

For the sauce:
4 tbsp ketchup
3 garlic cloves
3/4 cup sugar
1/2 cup white  vinegar
1 tbsp oil

Method:

1. Preheat the oven to about 175ºC (347º F).
2. Clean well the potatoes and cut them into cubes.
3. Spice the potatoes with salt and pepper.
4. Coat the cubes in flour and then dip into the egg mixed with the milk.
5. Fry deep in oil trying not to move the potatoes all the time until they were brown gold from one side. Then turn them upside down and wait until they were brown gold from the other side.

Note: It's important the oil to get the correct temperature before we begin to fry. To find out when it is,  put a bit of potato in the oil and, if right the way it boils up rounded by oil bubbles, it means the oil is ready to fry.
If we don't wait until a good oil temperature, the potatoes would consume almost all the oil and the dish would be really heavy.

Bondiola agridulce rellena con panceta y ciruelas con puré de manzanas - Sweet-and-sour pork, bacon and plum stuffed, with mashed apples

Esta bondiola es una perdición. No podría haber salido mejor.


Creo que el título lo dice todo: panceta, ciruela, bondiola, agridulce... y las manzanas le dan ese toque ácido como para no comerse el kilo y pico de bondiola en una cena.


Totalmente recomendable!


Para 4 personas


Ingredientes:


1 bondiola de cerdo de aproximadamente 1,2 kg con un corte central (lista para rellenar)

6 ciruelas pasas descarozadas (tipo presidente)
6 fetas de panceta ahumada (bacon)
1 chorrito de aceite neutro
sal y pimienta recién molida a gusto

Salsa agridulce:


100 grs azúcar negra

jugo 5 naranjas chicas
2 cdas. mostaza de dijón
1 cebolla grande
sal y pimienta a gusto

Puré de manzanas:


1 kilo manzanas  verdes

2 cditas azúcar
1 chorrito vinagre 




Paso a paso:

1. Envolver cada ciruela en una feta de panceta y rellenar la bondiola.
2. Salpimentar a gusto



3. Para la salsa, mezclar el jugo de naranja, la mostaza y el azúcar negra. Salpimentar a gusto y reservar.

4. En una sartén, echar un chorrito de aceite neutro y, una vez caliente, sellar la bondiola por ambos lados hasta que quede dorada.



5. Colocar en una asadera profunda la carne, bañarla con la salsa y colocar la cebolla cortada en juliana a los costados.

6. Llevá al horno precalentado a 200º por hora y media aproximadamente.
Rotar la carne cada media hora, bañándola cada vez con la salsa agridulce y el jugo de cocción.
7. Para el puré de manzanas, pelar y cortar las manzanas en cuartos, poner en una olla con el chorrito de vinagre y cocinar hasta que estén tiernas.
8. Colar bien, agregar el azúcar y procesar.
9. Cortar la carne en rodajas y servir con el puré, la salsa agridulce y las cebollas.

This dish is scrumptious. I cannot ask for more.


The title says everything: bacon, plum, pork, sweet-and-sour... and the apples are the perfect excuse to avoid eating the whole dish in one meal.


I totally recommend you try it!


4 servings


Ingredients:


1,2 kg pork shoulder with a central cut (so you can stuffed it)

6 prunes
6 bacon slices
1 tbsp neutral oil
salt and pepper at ease

Sweet-and-sour sauce:


100 grs brown sugar

5 oranges juice
2 tbsp Dijon mustard 
1 big onnion
salt and pepper at ease

Smashed apples:


1 kg green apples

2 tsp sugar
1 tbsp vinegar


Method:


1. Wrap every plum in a bacon slide and fill the pork shoulder with them.
2. Season at ease with salt and pepper.




3. For the sause, mix the orange juice, the mustard and the brown sugar. Season at ease with salt and pepper and save it.
4. In a saucepan, pour a dash of oil and, once it's hot, sear the pork until golden brown.
5. Put the pork in a deep pan, pour the sauce on it and add the onion cut into julienne strips.
6. Roast it in a preheated oven at 200ºC for about one hour an a half.




Rotate the pork every half an hour, pouring some of the sauce and its cooking juice.


7. For the smashing apples, peal and cut them into quaters and boil it until tender in a spot with water and a drop of vinegar.
8. Strain well, add sugar and smash.
9. Slice the pork and serve with the smashed apples, the sauce and the onions.
10. Enjoy!
